3/4 Cup peanut butter (chunky or smooth, depending on your preference)
1/4 Cup rice vinegar
1/3 Cup Tamari or Soy Sauce
3 Tbsp honey
1/2 tsp Ground Ginger
1 or 2 cloves minced garlic, (more if you like), to taste
1/4 tsp Red Pepper “Pizza” Flakes, plus more for garnish
2 to 4 Tbsp coconut milk, or as necessary to reach your desired sauce consistency
Optional: chopped green onion, chopped toasted peanuts and/or additional red pepper flakes for garnish
Whisk or blend together the peanut butter, vinegar, Tamari, honey, ginger, garlic and red pepper flakes in a bowl (or small food processor or blender).
Add a little coconut milk as you blend to thin the sauce/ dip to your preferred thickness.
Taste and adjust the seasonings. Garnish with optional sprinkles.
We like to serve this dip as a snack or appetizer (a “tide-you-over” when you’re making dinner while you’re ravenously hungry) with crunchy vegetable sticks, like celery, carrots, bell pepper strips, and turnip or kohlrabi matchsticks.
