AllSpice owner Rory Brown says: This snack mix recipe is one I recently served at a gathering at the store. It contains our Chermoula, and Berbere seasonings, along with Onion Salt, Persian Lime Olive Oil, and butter. I liked it with some Crystalized Ginger tossed in, but it’s a strongly flavored addition to an already very flavorful recipe, so you can consider that ingredient optional.
8 Cups Chex cereal
1 Cup Goldfish crackers
1 Cup pretzels
1 Cup Fritos corn chips
1 Cup mixed nuts
1 stick unsalted butter
1/4 Cup Persian Lime Fused Olive Oil
1/4 Cup Extra Virgin Olive Oil
2 Tbsp Chermoula Blend
1 Tbsp Berbere Spice Blend
1 tsp Toasted Onion Salt
1/2 tsp Kosher Salt
2 Tbsp Apricot White Balsamic Vinegar
1/2 Cup Crystalized Ginger, Diced, optional
Preheat oven to 225° F.
In a large bowl, mix together the Chex, crackers, pretzels, corn chips, and nuts.
In a small sauce pan, melt the butter, remove from heat and then add the oil and remaining ingredients (except the ginger). Whisk together the butter, oils and spices, then pour over the Chex mix ingredients. Gently toss mixture to evenly coat the crunchy Chex Mix ingredients with the seasonings.
Now stir in the ginger, if using.
Transfer the seasoned snack mixture to a large jelly roll pan (rimmed baking sheet), and bake in the warm oven for 30 minutes, stirring the mixture every 10 minutes so that it is evenly toasted.
Remove pan from oven and allow mix to thoroughly cool before placing in an airtight container.
Will keep in sealed container up to one week.
