This recipe took 2nd place at our Beef Rub Contest at the 2014 Iowa State Fair!
4 tsp Peppercorns, Black Smoked Whole
1 tsp Coriander, Extra-Bold Whole
2 tsp Chervil
1/2 tsp Black Mustard, Whole
2 tsp Hickory Smoked Salt
4 tsp Garlic, Granulated
2 tsp Onion, Granulated
1 tsp Cumin, Ground
1 Tbsp Worcestershire Powder
1/2 tsp Lemon Pepper
1/2 tsp Yellow Mustard, Ground
1/4 tsp Chipotle Chile Brown Powder
Using a spice grinder, grind together whole peppercorns, coriander, chervil, and black mustard seeds. Combine with all other ingredients.
Rub steaks with olive oil or vegetable oil, then liberally apply spice rub to all surfaces.
Grill steaks over direct heat until well browned. Move browned steaks to indirect heat, and cook to desired doneness.
