2 Tbsp vegetable oil
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1 large onion, sliced
1 lb shrimp, peeled and de-veined
2 Tbsp Cape Cod Seasoning
In a large pan, heat oil over medium high heat. Add chopped bell peppers and onion to the pan and sauté until they are just beginning to brown, about 7 minutes.
Add the shrimp and Cape Cod Seasoning to the peppers and onions. Toss lightly to combine and to coat all ingredients with the seasoning. Cook, stirring frequently, for an additional 6 minutes, or until shrimp is cooked through.
While the shrimp is cooking, place the tortillas on a microwave-safe plate with a damp paper towel between each one. Microwave for 30-45 seconds. (OR wrap 4-5 tortillas in aluminum foil and warm in a low oven, about 170°F, for 5-10 minutes).
Serve right away on warm tortillas with your favorite toppings!
